Potato Masala

Ingredients
Potato – 3
Carrot -1
Onion – 1
Green chilli – 2
Ginger – 1 small piece
Besan ( gram flour) – 1tsp
Turmeric powder – 1/2 tsp

Temepering
Oil
Mustard
Dry red chilli
Chana dal
Urad dal
Curry leaves
Method
Heat the pressure cooker pan . Add oil . Add ingredients under tempering . Add onion , green chilli, ginger saute till onion becomes translucent.
Add vegetables. Add 1/4 tsp turmeric powder . Add water to cook. Add salt as required . Pressure cook for 3 whistles.
After opening the pressure pan , bring the curry to boil . Add besan and turmeric powder mixed in 1/4 cup of water. Let it simmer for a while . Add a few drops of coconut oil . Serve with puri or roti .

PS: In the authentic method you have to boil and mash potatoes. As I am very lazy when it comes to peeling boiled potatoes I went with this method. Nobody at home fancies Puri. So Chapathi masala it is .

Vegetable Kuruma

Again one of the recipes from the blogging days . Urmi gave me the recipe a few years back when I was looking for a fool proof kuruma recipe . I have tweaked it a bit to the liking of the family .
Ingredients
Vegetables
Onion -2 , Potato-1, Carrot-1, Beans-3, Cauliflower-1/2 cup,  Beetroot -1 ( optional) ,  green peas-1/4 cup , green chilli – 2 , ginger garlic paste – 1/2 tsp
For grinding
Coconut – 1/2 cup
Cashew soaked for 10 minutes – 1/4 cup
chilli powder – 1 tbsp
corriander powder – 2 tbsp
garam masala – 1tbsp
For tempering
Oil , bay leaves , cardomom , cinnamon , cloves
Curry leaves or coriander leaves according to your taste
Method
In a pressure pan add oil and raw spices. Saute Onion and ginger garlic paste till the raw smell goes . Add cut veggies and cook with adequate water.
Meanwhile grind coconut , cashew , chilli powder , corriander powder and garam masala to a smooth paste. Saute this mix in a small kadai with some oil till the raw smell goes.
Then add it to the cooked veggies . Add chopped corriander leaves. Simmer for 2-3 minutes. Drizzle a few drops of oil for the final effect.
Serve with Roti

Mutton stew with left over curry

Required :

1. Left over mutton curry

2. 1-2 medium potatoes

3. thick coconut milk ( 1/2 cup)

4. curry leaves

5. 1 tsp coconut oil

Take one or two mutton pieces from the curry.

Cut one or two potato ( as you need ) into small pieces.

Add one cup water . Pressure cook in medium flame till 2-3 whistles.

Mix with left over curry . Bring to boil and simmer for 4-5 minutes.

Add one cup thick coconut milk. Add curry leaves and 1 tsp coconut oil .

Serve hot.

( Chicken stew can also be made like this from left over curry . Potato not necessary. )

Goes well with bread, appom, idiappom, dosa, chappathi ….anything. Makes a good easy Sunday breakfast .
