Again one of the recipes from the blogging days . Urmi gave me the recipe a few years back when I was looking for a fool proof kuruma recipe . I have tweaked it a bit to the liking of the family .
Onion -2 , Potato-1, Carrot-1, Beans-3, Cauliflower-1/2 cup, Beetroot -1 ( optional) , green peas-1/4 cup , green chilli – 2 , ginger garlic paste – 1/2 tsp
Coconut – 1/2 cup
Cashew soaked for 10 minutes – 1/4 cup
chilli powder – 1 tbsp
corriander powder – 2 tbsp
garam masala – 1tbsp
Oil , bay leaves , cardomom , cinnamon , cloves
Curry leaves or coriander leaves according to your taste
In a pressure pan add oil and raw spices. Saute Onion and ginger garlic paste till the raw smell goes . Add cut veggies and cook with adequate water.
Meanwhile grind coconut , cashew , chilli powder , corriander powder and garam masala to a smooth paste. Saute this mix in a small kadai with some oil till the raw smell goes.
Then add it to the cooked veggies . Add chopped corriander leaves. Simmer for 2-3 minutes. Drizzle a few drops of oil for the final effect.
